Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash baby potatoes and cut them in half or quarters.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, mix together ranch seasoning, garlic powder, onion powder, and black pepper.
  5. In a large bowl, toss the halved potatoes with olive oil and half of your ranch seasoning mixture.
  6. Line a baking sheet with parchment paper or grease it lightly.
  7. Spread the seasoned potatoes in a single layer on the baking sheet.
  8. Scatter the slices of smoked sausage over the potatoes.
Cooking
  1. Roast in the oven for 35-40 minutes until the potatoes are golden brown and tender, stirring halfway through.
  2. Sprinkle shredded cheddar cheese over the dish and return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
Serving
  1. Once ready, sprinkle with freshly chopped parsley and serve hot with a dollop of sour cream if desired.

Notes

For deeper flavor, sauté the sausage before adding to the potatoes. You can add seasonal veggies for variety. Leftovers can be reheated or used in other dishes.
