  • 1 can (10.75 ounce) cream of mushroom soup
  • 1 can (14.5 ounce) diced tomatoes with juice
  • 0.5 cup long grain white rice
  • 0.75 cup shredded mozzarella cheese
  • Salt and pepper to taste

Preparation
  1. Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Drain off the grease.
  2. Stir in the cream of mushroom soup, diced tomatoes, and uncooked rice.
  3. Cover and simmer over low heat, stirring occasionally, until the rice is cooked, about 15 minutes.
Broiling
  1. Preheat the oven's broiler.
  2. When the rice is done cooking, transfer the contents of the skillet to a casserole dish. Cover with a layer of cheese.
  3. Broil until the cheese is melted and toasty. Season with salt and pepper to taste.

Notes

For added flavor, consider adding chopped onions, garlic, or bell peppers to the ground beef while it cooks. You can substitute the ground beef with ground turkey or a plant-based meat alternative for a lighter option. Experiment with different types of cheese! Cheddar or a cheese blend can add different flavors to your casserole. To store leftovers, allow the casserole to cool completely before transferring it to an airtight container. It can be kept in the fridge for up to 3 days.
