  • 1 pound ground beef
  • 1 can (10.75 ounce) cream of mushroom soup
  • 1 can (14.5 ounce) diced tomatoes with juice
  • 0.5 cup long grain white rice Uncooked
  • 0.75 cup shredded mozzarella cheese For topping
  • Salt and pepper to taste For seasoning

Preparation
  1. Crumble the ground beef into a skillet over medium-high heat. Cook and stir until it turns brown. Drain off any excess grease.
  2. Stir in the cream of mushroom soup, diced tomatoes (with juice), and uncooked rice. Cover the skillet, and let it simmer over low heat, stirring occasionally until the rice is cooked, about 15 minutes.
Broiling
  1. Preheat the oven's broiler. Once the rice is done cooking, transfer the mixture from the skillet into a casserole dish. Sprinkle a layer of shredded mozzarella cheese on top.
  2. Broil the casserole in the oven until the cheese is melted and golden brown. Season with salt and pepper to taste, and then enjoy!

Notes

Serve hot from the oven, possibly with a green salad or garlic bread. This casserole makes excellent leftovers; consider doubling the recipe. For extra flavor, add onions or bell peppers while cooking the beef. You can substitute different cheeses or make a vegetarian version using beans or lentils.
