  • 4 boneless chicken breasts
  • 3 cloves garlic minced
  • 3 tbsp butter
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella
  • 1/4 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • fresh parsley optional, for garnish

Method
 

  1. Heat butter in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Sear until golden on both sides. Remove and set aside.
  2. Add more butter to the skillet and sauté minced garlic until fragrant.
  3. Pour in heavy cream and stir. Let it simmer until slightly thickened. Add grated Parmesan and mix until melted.
  4. Return the chicken to the skillet, spoon sauce over it, and top with shredded mozzarella. Cover and cook until chicken is done and cheese is melted.
  5. Garnish with fresh parsley and serve hot.

Notes

Pound chicken for even cooking. Use freshly shredded cheese for best results. For a spicy kick, add red pepper flakes. Pairs well with cauliflower mash or roasted vegetables.
