  • 2 red apples, sliced
  • 2 green apples, sliced
  • 1 cup dried cranberries
  • 1 can mandarin oranges, drained
Dressing
  • 1/2 cup vanilla yogurt Can substitute with Greek yogurt for fewer calories.
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded carrots, sliced red and green apples, dried cranberries, and drained mandarin oranges. Toss lightly to mix, allowing the colors to pop.
  2. In a separate small bowl, whisk together the vanilla yogurt, mayonnaise, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss gently to ensure everything is well coated.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving for enhanced flavors.

Notes

Best served chilled or at room temperature. Can be customized with various ingredients. Store leftovers in an airtight container for 3-5 days. This salad does not freeze well.
