  • 2 tbsp olive oil Extra virgin olive oil is preferred.
  • 2 cloves garlic, minced Fresh garlic adds flavor.
  • 1 cup vegetable broth Low-sodium is ideal.
  • 1 tbsp balsamic vinegar Adds acidity to brighten the dish.
  • to taste Salt and pepper Essential seasonings.
  • to taste Fresh herbs (like parsley or thyme) for garnish Chop finely for a bright finish.
  • to taste Parmesan cheese (optional) Use freshly grated for the best flavor.

Method
 

Preparation
  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet over medium heat, add olive oil and let it warm.
  3. Add sliced onions and stir occasionally, letting them cook slowly until browned and sweet for about 20-25 minutes.
  4. Add minced garlic and stir for another minute.
  5. Pour in vegetable broth and balsamic vinegar, seasoning with salt and pepper. Simmer together for about 5 minutes.
  6. Add the cooked pasta to the skillet and carefully toss to coat every strand with the sauce.
  7. Serve in bowls, garnishing with fresh herbs and optional Parmesan.

Notes

Allow onions to caramelize fully for maximum sweetness. Keep the heat on medium to avoid burning. Taste as you go to adjust seasoning.
