  • 1 cup andouille sausage, sliced

  • 1 can white beans, drained

  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
  2. Add the sliced andouille sausage and cook until browned.
  3. Stir in shredded chicken, shrimp, and white beans.
  4. Pour in chicken broth and season with Cajun seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes.
  6. Serve hot, garnished with chopped green onions.

Notes

Cajun White Chicken Chili is best served hot. It pairs well with cornbread, rice, or tortilla chips for added crunch. Consider using smoked sausage for extra flavor. For a vegetarian version, omit the chicken and sausage and use vegetable broth.
