Cooking
  1. In a large pot, brown the andouille sausage over medium heat.
  2. Add chopped vegetables and sauté until softened.
  3. Stir in diced potatoes and Cajun spices, cooking for a minute to release flavors.
  4. Pour in the broth and bring to a boil; then reduce to a simmer until potatoes are tender.
  5. Mix in heavy cream and cheddar cheese, stirring until cheese melts.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For a spicier kick, add more Cajun spices or some hot sauce. Let leftovers cool completely before storing. Pairs well with crusty bread or a simple salad.
