Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Lean and versatile, chicken breasts soak up flavor beautifully.
  • 2 tablespoons Cajun seasoning This blend of spices adds a delightful kick, ensuring every bite is flavorful.
  • 2 tablespoons olive oil Helps the seasoning stick to the chicken and keeps it juicy as it grills.
For the Alabama White Sauce
  • 1 cup mayonnaise The base for our Alabama white sauce provides a rich creaminess.
  • 1 tablespoon apple cider vinegar Adds just the right amount of tang to balance out the richness of the mayonnaise.
  • 1 teaspoon lemon juice Brightens the sauce with a fresh pop of flavor; a little zest goes a long way!
  • 1 teaspoon Dijon mustard Gives the sauce a bit of a kick and rounds out the flavor profile nicely.
  • 1/2 teaspoon garlic powder For that warm, aromatic essence and savory depth.
  • Salt and pepper Essential for bringing all the flavors together!

Method

Preparation
  1. Preheat your grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, coating them generously, then sprinkle with Cajun seasoning. Massage the seasoning into the chicken.
Grilling
  1. Place the seasoned chicken on the hot grill and cook for about 6-7 minutes on each side or until fully cooked.
  2. You’ll know it’s done when the juices run clear and you see those beautiful grill marks.
Making the Sauce
  1. While the chicken is grilling, mix together mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, garlic powder, salt, and pepper in a bowl. Whisk until creamy.
Serving
  1. Once the chicken is grilled to perfection, serve it hot with a generous amount of Alabama white sauce on top.

Notes

Let the chicken marinate with the Cajun seasoning for a few hours or even overnight for an extra flavor boost. Use a meat thermometer to ensure the chicken has reached 165°F. This dish is also great with seasonal veggies on the grill.
