  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped green onions for garnish

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the sliced smoked sausage and cook for 5-7 minutes until browned and caramelized.
  3. Add the diced onion, bell pepper, celery, and minced garlic. Sauté for about 4-5 minutes.
  4. Stir in 1 cup of long-grain rice and cook for an additional 2-3 minutes.
  5. Pour in 2 cups of chicken broth and add the Cajun seasoning.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes.
  7. Season with salt and pepper to taste, fluff the rice with a fork, and garnish with green onions.
