  • 2 pieces chicken breasts
  • 2 tablespoons Cajun seasoning Adjust spice level to taste.
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream Can replace with half-and-half for a lighter version.
  • 1 cup chicken broth Use to loosen sauce when reheating.
  • 1 tablespoon olive oil
  • 1 piece bell pepper (sliced)
  • 1 piece onion (sliced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Parmesan cheese (for serving) Freshly grated for best flavor.

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken breasts and season with Cajun seasoning; cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and slice.
  3. In the same skillet, add onion, bell pepper, and garlic; sauté until vegetables are softened.
Cooking
  1. Pour in chicken broth and heavy cream, bringing to a simmer.
  2. Add the cooked pasta and sliced chicken to the skillet; toss to coat in the sauce.
  3. Season with salt and pepper to taste.
Serving
  1. Serve warm, topped with Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the stovetop or microwave, adding a splash of chicken broth or cream if needed. Consider adding spinach, mushrooms, or zucchini to the dish for extra veggies.
