Method
Cooking the Pasta and Chicken
- Cook the pasta according to package instructions. Drain and set aside.
- Coat the chicken breasts with Cajun seasoning.
- In a large skillet, heat olive oil over medium heat, and cook the chicken for about 5-7 minutes per side, or until cooked through. Remove from the pan and slice.
Making the Sauce
- In the same skillet, add the bell peppers and onion; sauté until soft.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and let cook for 2-3 minutes until slightly thickened.
Combining and Serving
- Add the cooked pasta and sliced chicken to the sauce. Stir to combine and heat through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
To store leftover Cajun Chicken Pasta, place it in an airtight container and refrigerate. It will stay fresh for up to 3 days. Reheat in a skillet over medium heat or in the microwave until warmed through.
