  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust based on spice preference.
  • 8 ounces pasta (like penne or fettuccine) Use your preferred type of pasta.
  • 1 tablespoon olive oil
  • 1 cup heavy cream Substitute with a vegan cream for dairy-free version.
  • 1 cup chicken broth
  • 1 cup bell peppers (sliced) Use fresh veggies for crunch.
  • 1/2 cup onion (chopped)
  • to taste salt and pepper
  • for garnish Fresh parsley

Method
 

Cooking the Pasta and Chicken
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Coat the chicken breasts with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium heat, and cook the chicken for about 5-7 minutes per side, or until cooked through. Remove from the pan and slice.
Making the Sauce
  1. In the same skillet, add the bell peppers and onion; sauté until soft.
  2. Pour in the chicken broth and bring to a simmer.
  3. Stir in the heavy cream and let cook for 2-3 minutes until slightly thickened.
Combining and Serving
  1. Add the cooked pasta and sliced chicken to the sauce. Stir to combine and heat through.
  2. Season with salt and pepper to taste.
  3. Garnish with fresh parsley before serving.

Notes

To store leftover Cajun Chicken Pasta, place it in an airtight container and refrigerate. It will stay fresh for up to 3 days. Reheat in a skillet over medium heat or in the microwave until warmed through.
