  • 2 teaspoons Cajun seasoning Adjust based on preferred spice level.
  • 8 ounces pasta (fettuccine or penne) Make sure not to overcook for better texture.
  • 1 cup heavy cream Can substitute with a milk alternative for a lighter version.
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 piece bell pepper, sliced Feel free to add other vegetables like mushrooms or spinach.
  • 1 piece onion, chopped
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish) Use as a garnish when serving.

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned and cooked through.
  3. Add the sliced bell pepper and chopped onion to the skillet, sauté until softened.
  4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and allow to thicken slightly.
  5. Combine the cooked pasta with the sauce, stirring to coat. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.

Notes

For storage, let the pasta cool completely, then place in an airtight container. It should last about 3 days in the fridge. Reheat on the stove or microwave until heated through.
