Cabbage burgers are a fun and healthy twist on traditional burgers, using cabbage steaks instead of bread for a lighter option packed with flavor.

Ingredients
  

Cabbage Steaks
  • 1 or 2 heads green cabbage, cut into 2.5 cm (1 inch) thick steaks Choose fresh heads that feel heavy for their size.
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt For seasoning
  • 1/4 tsp black pepper For seasoning
  • 1/4 tsp red pepper flakes Optional, for added spice
  • 1 tsp grated garlic or finely minced
  • 1/2 cup chopped parsley
Beef Patties
  • 1 lb ground beef Can experiment with other ground meats like turkey or chicken
  • 1/4 cup tomato sauce or ketchup
  • 1/2 cup shredded mozzarella cheese Can swap with cheddar or feta
  • avocado oil for brushing

Method
 

Preparation
  1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
  2. Slice the cabbage into 1 inch (2.5 cm) thick steaks and arrange them on the sheet.
  3. Brush each cabbage steak with avocado oil and sprinkle with salt and pepper.
  4. Bake for 10 minutes to soften.
Burger Assembly
  1. While the cabbage bakes, mix together the ground beef, Dijon mustard, grated garlic, parsley, red pepper flakes, salt, and black pepper in a bowl.
  2. Shape the mixture into 4 equal patties.
  3. Remove the cabbage from the oven and spoon tomato sauce or ketchup on each slice.
  4. Place a beef patty on top of each cabbage slice.
Cooking
  1. Return the tray to the oven and bake for 10 to 12 minutes until the patties are cooked through.
  2. In the last 2 to 3 minutes of baking, sprinkle mozzarella on top of each patty and bake until the cheese melts.
Serving
  1. Serve warm, garnished with extra parsley if desired.

Notes

These cabbage burgers are best served warm and can be enjoyed on their own or with fresh toppings. Consider adding toppings like sliced tomatoes, onions, or your favorite sauces. For extra crunch, bake the cabbage steaks a bit longer before adding the beef.
