Preparation
- Preheat the oven to 400°F (200°C). Place a cooling rack on a baking sheet and spray it with cooking spray.
- In a medium bowl, mix together the shredded chicken, cream cheese, and buffalo sauce until well combined.
- Fold in the shredded cheddar cheese and mix until everything is combined.
- Warm the tortillas in the microwave for about 45 seconds to make them pliable.
- Spoon 2-3 tablespoons of the chicken mixture into each tortilla. Sprinkle a little blue cheese on top.
- Roll the tortillas up tightly, seam side down, and place them on the prepared baking sheet.
- Spray the tops of the taquitos with cooking spray to help them crisp up.
Cooking
- Bake in the oven for 10-15 minutes until they are golden and crispy.
- Serve warm for the best taste!
Notes
These taquitos pair well with ranch or blue cheese dressing. Add fresh veggies or a side salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
