  • 2 cups shredded cooked chicken Use rotisserie chicken for quicker prep.
  • 4 oz cream cheese, softened
  • 2 tbsp buffalo sauce Adjust for spice level.
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese Optional for topping.
  • 10 pieces fajita-sized flour tortillas Warm to make pliable.

Preparation
  1. Preheat the oven to 400°F (200°C). Place a cooling rack on a baking sheet and spray it with cooking spray.
  2. In a medium bowl, mix together the shredded chicken, cream cheese, and buffalo sauce until well combined.
  3. Fold in the shredded cheddar cheese and mix until everything is combined.
  4. Warm the tortillas in the microwave for about 45 seconds to make them pliable.
  5. Spoon 2-3 tablespoons of the chicken mixture into each tortilla. Sprinkle a little blue cheese on top.
  6. Roll the tortillas up tightly, seam side down, and place them on the prepared baking sheet.
  7. Spray the tops of the taquitos with cooking spray to help them crisp up.
Cooking
  1. Bake in the oven for 10-15 minutes until they are golden and crispy.
  2. Serve warm for the best taste!

Notes

These taquitos pair well with ranch or blue cheese dressing. Add fresh veggies or a side salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
