Ingredients
  

For the sliders
  • 1 whole rotisserie chicken, shredded (about 3-4 cups shredded chicken)
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing
  • 1 teaspoon cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 packages King's Hawaiian rolls (12 count each)
  • 8 ounces shredded Monterey Jack cheese
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat the oven to 350 degrees F. Spray a large baking dish or a rimmed baking sheet with cooking spray and set it aside.
  2. In a bowl, combine the shredded chicken with buffalo sauce, ranch dressing, cajun seasoning, salt, and pepper.
  3. Slice the rolls in half, placing the bottom halves in the prepared baking pan cut side up.
  4. Sprinkle half of the cheese on the bottom halves, then add the chicken mixture and top with the remaining cheese.
  5. Place the top halves of the rolls on top.
  6. In a small bowl, mix melted butter and Italian seasoning; brush over the tops of the sliders.
Baking
  1. Bake for 10-15 minutes or until the cheese is melted and the tops are slightly browned.
Serving
  1. Serve warm, with coleslaw if desired.

Notes

Feel free to adjust the spicy level of the buffalo sauce based on your preference. You can add extra toppings like sliced jalapeños or blue cheese for added flavor. For a crispier top, broil the sliders for the last few minutes of baking. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days.
