Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 onion, diced
  • 2 cloves garlic, minced
Liquids
  • 4 cups vegetable broth Can substitute with chicken broth.
  • 1 tablespoon olive oil For sautéing.
Spices
  • 1 teaspoon Italian herbs
  • 1/2 teaspoon crushed red pepper Adjust for spice preference.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
  3. Add the broccoli and cauliflower florets to the pot and stir them well.
Cooking
  1. Pour in the vegetable broth and bring the mixture to a boil.
  2. Reduce the heat and let it simmer for about 10 minutes, or until the vegetables are tender.
  3. Use an immersion blender to blend the soup until smooth; if you like a chunkier texture, blend only half of it.
Finishing Touches
  1. Stir in the Italian herbs, crushed red pepper, salt, and pepper to enhance the flavors.
  2. Serve the soup hot for a cozy meal.

Notes

For added flavor, garnish with fresh herbs or a drizzle of olive oil. Pairs well with crusty bread or a salad. Use fresh vegetables for the best flavor, but frozen can work. For creamier texture, add a splash of heavy cream or sour cream.
