Preparation
  1. Cook your favorite pasta according to package instructions, usually around 5-7 minutes in boiling salted water until al dente. Stir occasionally to prevent sticking.
  2. In a large bowl, toss together the cooked pasta, peppery arugula, halved cherry tomatoes, and crumbled feta cheese. The warm pasta will slightly wilt the arugula, enhancing its flavor.
  3. In a small bowl, whisk together the olive oil, the juice of one fresh lemon, and minced garlic until well combined for the dressing.
  4. Drizzle the dressing over the pasta salad and toss gently to combine, ensuring every ingredient is beautifully coated.

Notes

You can find arugula and feta cheese at most grocery stores. Upgrade your ingredients by using homemade pasta or specialty oils. For leftovers, store in an airtight container in the fridge for up to 3 days. Mix in dressing just before serving for best results.
