Ingredients
  

Bagel Base
  • 4 large large bagels (plain, everything, sesame, or your favorite) Use day-old bagels for better stability.
Egg Mixture
  • 4 large large eggs
  • ¼ cup milk or cream
  • ½ cup shredded cheese (cheddar, Swiss, mozzarella, or blend)
  • ½ cup cooked bacon, ham, or sausage (optional) Skip for a vegetarian option.
  • ½ cup sautéed vegetables (spinach, peppers, mushrooms) Feel free to experiment with different veggies.
  • to taste Salt and pepper
  • to taste Fresh herbs like chives or parsley (optional) Add for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice the top third off each bagel and hollow out the centers, leaving sturdy walls.
  3. In a bowl, whisk together eggs, milk, salt, and pepper, then stir in cheese, meats, veggies, and herbs if using.
Baking
  1. Place the bagels on the baking sheet and fill each with the egg mixture, stopping just below the rim.
  2. Bake for 18–22 minutes, until the eggs are puffed and set.
  3. Cool slightly and enjoy warm, topped with extra herbs if desired.

Notes

Great on their own or with a side of fresh fruit or a simple salad. For a bit of crunch, add extra herbs or a light drizzle of hot sauce.
