Preparation
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice the top third off each bagel and hollow out the centers, leaving sturdy walls.
- In a bowl, whisk together eggs, milk, salt, and pepper, then stir in cheese, meats, veggies, and herbs if using.
Baking
- Place the bagels on the baking sheet and fill each with the egg mixture, stopping just below the rim.
- Bake for 18–22 minutes, until the eggs are puffed and set.
- Cool slightly and enjoy warm, topped with extra herbs if desired.
Notes
Great on their own or with a side of fresh fruit or a simple salad. For a bit of crunch, add extra herbs or a light drizzle of hot sauce.
