Main Ingredients
  • 8 oz cream cheese, softened Make sure it's at room temperature for easy mixing.
  • 16 oz sour cream
  • 1 oz packet ranch seasoning mix
  • 15 oz can fire roasted corn, drained
  • 10 oz can Rotel, drained
  • 4 oz can diced green chiles, drained
  • 8 oz shredded cheddar cheese

Method
 

Preparation
  1. Whip cream cheese in a large mixing bowl until creamy and smooth.
  2. Add sour cream, ranch seasoning, corn, Rotel, green chiles, and cheese to the bowl. Stir to combine well.
  3. Cover the mixing bowl tightly and refrigerate for at least 2-3 hours.
Serving
  1. Serve chilled with tortilla or pita chips as dippers.

Notes

Can be made a day ahead for better flavor blending. For added spiciness, mix in jalapeños. Store leftovers tightly covered; good for up to 3 days in the refrigerator. Do not freeze.
