Salad Ingredients
  • 8 cups chopped broccoli Use fresh broccoli for best texture.
  • 1 cup fresh blueberries Wash and dry thoroughly before use.
  • 1/3 cup dried blueberries
  • 1/2 cup cashews Can be roasted for extra crunch.
  • 1/4 cup chopped green onions
  • 1 tablespoon lemon zest
Dressing Ingredients
  • 1 cup Lemon Poppyseed Dressing Make your own or use store-bought.
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon sugar Adjust according to taste.
  • 2 teaspoons poppy seeds
  • 1 tablespoon lemon juice Fresh lemon juice is recommended.

Method
 

Prepare the Dressing
  1. In a bowl, add all the ingredients for the Lemon Poppyseed dressing and whisk them together. Set aside.
Combine Salad Ingredients
  1. In another bowl, combine the chopped broccoli, fresh blueberries, dried blueberries, cashews, green onions, and lemon zest.
  2. Drizzle the Lemon Poppyseed dressing over the broccoli mixture and mix well.
Chill the Salad
  1. Refrigerate the salad until ready to serve.

Notes

For optimal freshness, enjoy the salad within 2-3 days. If it becomes soggy, add fresh broccoli and cashews to restore crunch.
