  • 1 cup blueberries (fresh or frozen) Fold in carefully.

  • 1/4 cup melted butter Melt and let cool slightly before mixing.
  • 1 large piece egg Can be replaced with a flaxseed or chia seed mixture for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda Distribute evenly for proper rising.
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour Can replace half with whole wheat flour for a healthier option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
  2. In a mixing bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract. Stir until smooth, about 2-3 minutes.
  3. In another bowl, whisk together the flour, baking soda, and salt until evenly mixed.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined, about 30 seconds. Do not overmix.
  5. Fold in the blueberries carefully.
  6. Pour the batter into the prepared loaf pan and spread it out evenly.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack.
  3. Slice and serve once it’s cool enough to handle.

Notes

Serve warm or at room temperature. Pair with whipped cream or a light dusting of powdered sugar. Store leftovers in an airtight container for up to 3 days or freeze up to 3 months.
