Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
- In a mixing bowl, combine the mashed bananas, sugar, melted butter, egg, and vanilla extract. Stir until smooth, about 2-3 minutes.
- In another bowl, whisk together the flour, baking soda, and salt until evenly mixed.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined, about 30 seconds. Do not overmix.
- Fold in the blueberries carefully.
- Pour the batter into the prepared loaf pan and spread it out evenly.
Baking
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack.
- Slice and serve once it’s cool enough to handle.
Notes
Serve warm or at room temperature. Pair with whipped cream or a light dusting of powdered sugar. Store leftovers in an airtight container for up to 3 days or freeze up to 3 months.
