  • 1 cup cottage cheese Use whole or low-fat.
  • 1 cup rolled oats Acts as a binder and adds heartiness.
  • 1 large egg Acts as a binder.
  • 1/4 cup honey or maple syrup For sweetness.
  • 1 tsp vanilla extract Adds a warm flavor.
  • 1 tbsp lemon zest From 1 large lemon.
  • 1/2 tsp baking powder For lift.
  • 1 pinch salt Enhances flavors.
  • 3/4 cup fresh or frozen blueberries Do not thaw if using frozen.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. In a blender or food processor, combine the cottage cheese, oats, egg, honey, vanilla, lemon zest, baking powder, and salt. Pulse until well combined.
  3. Pour the batter into a bowl and gently fold in the blueberries.
  4. Let the batter rest for 5 minutes to thicken slightly.
  5. Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, or until firm to the touch and lightly golden.
  7. Allow them to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These bites can be prepared a day in advance and stored in the refrigerator. They can also be frozen for up to three months.
