Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then add sour cream, lemon juice, and lemon zest until combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the blueberries.
- Pour the batter into the prepared loaf pan and spread evenly.
- In a small bowl, mix together the brown sugar, rolled oats, flour, and cinnamon. Sprinkle this mixture over the batter.
Baking
- Place the loaf in the oven and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve the loaf warm or at room temperature. Garnish with powdered sugar or whipped cream if desired. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
