Preparation
- Preheat the Blackstone grill to medium heat (about 375°F). Ensure that the grill surface is clean and ready for cooking.
- Pour in 2 tablespoons of vegetable oil, spreading it evenly across the grill surface.
Cooking
- Add the mixed vegetables to the grill and stir-fry for 2-3 minutes until they are tender and vibrant.
- Push the vegetables to one side, and crack 2 eggs onto the other side. Scramble the eggs until they are fully cooked (about 2-3 minutes).
- Add the cooked rice to the grill, stirring to combine it with the eggs and vegetables. Cook for an additional 5-7 minutes, stirring regularly, until the rice is heated through and any moisture evaporates.
- Drizzle soy sauce and sesame oil over the rice and stir to ensure the flavors are well combined.
- Season with salt and pepper to taste, adjusting to your preference.
- Garnish the dish generously with chopped green onions before serving hot.
Notes
Store leftover fried rice in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for up to 2 months. For reheating, use the stovetop with a splash of water or oil.
