  • 3 cups cooked rice Use day-old rice for best texture.
  • 2 tablespoons vegetable oil For frying.
  • 1 cup mixed vegetables (peas, carrots, corn) Fresh or frozen both work well.
  • 2 eggs eggs Scrambled in the cooking process.
  • 3 pieces green onions, chopped For garnish.
  • 4 tablespoons soy sauce Can use gluten-free soy sauce for variation.
  • 1 tablespoon sesame oil For flavor enhancement.
  • to taste Salt and pepper Adjust according to preference.

Preparation
  1. Preheat the Blackstone grill to medium heat (about 375°F). Ensure that the grill surface is clean and ready for cooking.
  2. Pour in 2 tablespoons of vegetable oil, spreading it evenly across the grill surface.
Cooking
  1. Add the mixed vegetables to the grill and stir-fry for 2-3 minutes until they are tender and vibrant.
  2. Push the vegetables to one side, and crack 2 eggs onto the other side. Scramble the eggs until they are fully cooked (about 2-3 minutes).
  3. Add the cooked rice to the grill, stirring to combine it with the eggs and vegetables. Cook for an additional 5-7 minutes, stirring regularly, until the rice is heated through and any moisture evaporates.
  4. Drizzle soy sauce and sesame oil over the rice and stir to ensure the flavors are well combined.
  5. Season with salt and pepper to taste, adjusting to your preference.
  6. Garnish the dish generously with chopped green onions before serving hot.

Notes

Store leftover fried rice in an airtight container in the refrigerator for up to 3-4 days. It can also be frozen for up to 2 months. For reheating, use the stovetop with a splash of water or oil.
