- In a large bowl, combine black beans, corn, bell pepper, onion, tomatoes, and cilantro.
- Squeeze lime juice over the salad.
- Season with salt and pepper.
- Mix well and serve with tortilla chips or over chopped lettuce.
Notes
Make sure to rinse the black beans well to remove excess sodium. Adjust the lime juice and seasonings to your taste preference. For added crunch, toss in some diced cucumber or jicama.
