Ingredients
  

For the treats
  • 1/2 cup salted butter (1 stick)
  • 16 ounces fresh marshmallows (8 cups mini) Use fresh marshmallows for softer texture.
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract (optional)
  • 1/4 teaspoon coconut extract (optional)
  • 7 cups Rice Krispies cereal 1 cup of crispy rice equals 1 ounce.

Method
 

Preparation
  1. Prepare a 9x13 inch pan with nonstick spray or line it with parchment paper.
  2. In a large pot, melt the salted butter over medium heat.
  3. Add the fresh marshmallows to the melted butter and stir until completely melted and smooth.
  4. Mix in the kosher salt, vanilla, almond extract, and coconut extract if using.
  5. Add the Rice Krispies cereal to the mixture and mix well, working quickly to prevent the marshmallow from hardening.
  6. Pour the mixture into the prepared pan and gently press it into shape using damp hands.
  7. Allow the Rice Krispies to cool at room temperature for about an hour or less for gooey bars.
  8. Lift the bars out of the pan using the parchment paper and cut them into squares.

Notes

Store any leftovers in a tightly sealed container at room temperature. They will last for 3-5 days. Avoid freezing as it alters the texture.
