Ingredients
  

For the Chicken
  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice can substitute with lemon juice
  • 1 teaspoon chili powder add chipotle powder for more heat
  • 1 teaspoon cumin
  • Salt and pepper to taste
For Assembly
  • 8 small corn or flour tortillas
  • 1 cup pico de gallo
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • 1 whole avocado, sliced
  • Sour cream (optional)

Method
 

Preparation
  1. In a bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt, and pepper until well combined.
  2. Place the chicken breasts in the marinade, ensuring they are evenly coated. Allow them to marinate for at least 30 minutes.
Grilling
  1. Preheat your grill to medium-high heat, reaching around 375°F for optimal cooking.
  2. Grill the marinated chicken for 6-8 minutes on each side or until the internal temperature reaches 165°F.
  3. Remove the chicken from the grill and let it rest for a few minutes before slicing into strips.
Assembling Tacos
  1. Warm the tortillas on the grill for about 30 seconds on each side until they are pliable.
  2. Assemble your tacos by placing grilled chicken strips in the warm tortillas, then top with pico de gallo, lettuce, cheese, sliced avocado, and add sour cream if desired.
  3. Serve immediately and enjoy!

Notes

Marinate the chicken for up to 2 hours for deeper flavor. Avoid overcrowding the grill for even cooking. Serve with lime wedges and a side salad for a complete meal.
