  • 1 cup mixed berries (blueberries, strawberries, raspberries) Use fresh or thawed frozen berries
  • 1/2 cup shelled pistachios Chopped for easier mixing
  • 1/4 medium red onion Thinly sliced
  • 1/4 cup feta cheese Optional
Vinaigrette Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey Can be substituted with maple syrup for vegan option
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. In a large salad bowl, combine the fresh spinach, mixed berries, shelled pistachios, and thinly sliced red onion. Toss gently to distribute the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until fully combined and slightly thickened.
  3. Drizzle the vinaigrette over the salad and toss gently until all ingredients are coated. Optionally, sprinkle with feta cheese.
Serving
  1. Serve immediately for the freshest taste, ideally chilled. Garnish with whole berries or extra pistachios.

Notes

Best enjoyed fresh. Store leftovers in an airtight container for up to 2 days, keeping the vinaigrette separate until serving.
