Preparation
- In a large pot or crock pot, brown the beef cubes over medium heat.
- Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the shredded carrots, diced potatoes, barley, beef broth, water, thyme, bay leaf, salt, and pepper.
Cooking
- Bring to a boil then reduce heat and simmer for 1.5 to 2 hours on the stove or 6-8 hours in the crock pot, until the beef is tender and the barley is cooked.
- Remove the bay leaf before serving.
Notes
Serve hot in a bowl, garnished with fresh parsley. Pairs well with crusty bread or crackers. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 3 months.
