  • 1 pound ground beef Lean ground beef keeps the dish hearty; can substitute with ground turkey or chicken.
  • 1 bell pepper sliced bell pepper Use red, yellow, or orange for sweetness, or green for a slightly bitter bite.
  • 2 cups cooked rice Leftover rice works wonderfully, just make sure to fluff it up before serving.
  • 1 onion chopped onion Brings sweetness and depth of flavor.
  • 3 cloves minced garlic Enhances the dish's aroma and flavor.
  • 2 tablespoons soy sauce For gluten-free version, opt for tamari.
  • 1 tablespoon olive oil Extra virgin olive oil helps sauté and prevents sticking.

Method
 

Cooking
  1. In a large skillet over medium heat, add your tablespoon of olive oil.
  2. Toss in your chopped onion and minced garlic. Sauté for about 3-5 minutes until the onions are soft and translucent.
  3. Add in the pound of ground beef. Break it apart as it cooks, stirring until the pink fades into tender, browned meat (around 5-7 minutes).
  4. Slide in the sliced bell pepper, sauté for another 3-4 minutes until the pepper becomes tender but still retains some crunch.
  5. Pour in the soy sauce and sprinkle with salt and pepper to taste. Mix well.
  6. Spoon the beef mixture over your fluffy rice in serving bowls and top with chopped green onions.

Notes

Prep ahead by chopping veggies and cooking rice in advance. Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for later use.
