  • 1 cup mayonnaise (vegan recommended)
  • 1 cup fresh basil Use fresh for best flavor.
  • 3 cloves garlic (fresh or roasted) Roasting garlic is optional; it adds a sweeter flavor.
  • 1 tablespoon fresh lemon juice Adjust based on tanginess preference.
  • 1 teaspoon fresh lemon zest Adjust based on tanginess preference.

Preparation
  1. Preheat your oven to 400°F. Cut off the top of a garlic bulb so the cloves are exposed. Drizzle garlic with olive oil, wrap it in aluminum foil, and roast for 45 minutes.
  2. In a food processor, combine mayonnaise and fresh basil. Pulse until fully mixed (about 45-60 seconds).
  3. Add chopped or pressed garlic and pulse again for another 30-45 seconds.
  4. Finally, add lemon juice and lemon zest, and pulse until everything is well combined (about 30 seconds).
Serving
  1. Enjoy your aioli as a tasty dip with sandwiches, wraps, or drizzled over grilled meats or fish.

Notes

Store in an airtight container in the refrigerator for up to 4-5 days. Stir before serving as ingredients may separate. Use fresh basil for best flavor. Roasted garlic adds sweetness; raw garlic gives a stronger flavor. For variations, try adding other herbs or a pinch of red pepper flakes for heat.
