Ingredients
  

Wet Ingredients
  • 3 pieces very ripe bananas, peeled and mashed The riper, the better!
  • cup butter, melted
  • 1 large egg
  • ¾ cup granulated sugar You can use brown sugar as an alternative.
  • 1 teaspoon pure vanilla extract
Dry Ingredients
  • 1 ½ cups unbleached all-purpose flour Bleached flour can be used as an alternative.
  • ½ teaspoon baking soda Or use 1 ½ teaspoons baking powder.
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. In a medium-sized bowl, place the mashed bananas and stir in the melted butter.
  3. Mix in the egg, sugar, and vanilla extract until combined.
  4. Add the flour, baking soda, and a pinch of salt to the mixture. Make sure all ingredients are well combined.
Baking
  1. Pour the batter into a greased 8×4 inch loaf pan.
  2. Bake for one hour or until a toothpick inserted in the center comes out clean.
  3. Let it cool before serving.

Notes

Serve plain or with butter, cream cheese, or nut butter. Store wrapped tightly at room temperature for up to three days, or freeze for up to three months. You can add nuts or chocolate chips for extra flavor.
