Ingredients

  • 2 cups chopped rhubarb
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt until combined.
  3. In a separate bowl, whisk together the milk, egg, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, then gently fold in the chopped rhubarb until evenly distributed.
  5. Using a spoon or ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until golden brown and a toothpick comes out clean.
Glaze Preparation
  1. While the fritters are baking, prepare the glaze by whisking together the powdered sugar and milk until smooth.
  2. Adjust the consistency of the glaze with more milk or sugar if necessary.
Serving
  1. Once the fritters are out of the oven and slightly cooled, drizzle the glaze over them and serve warm.
