  • 4 boneless pork chops at least 1 inch thick Choose chops that are at least 1 inch thick for best texture.
  • 1 tablespoon olive oil
  • 1 teaspoon yellow mustard
Seasoning Mix
  • 1 tablespoon brown sugar
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

Preparation
  1. Heat the oven to 400 degrees F and line a rimmed baking sheet with baking parchment or aluminum foil.
  2. Place the pork chops between two pieces of plastic wrap and gently pound them using a rolling pin or the flat side of a meat mallet to tenderize them.
  3. Rub both sides of the chops with olive oil and mustard.
  4. In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub this seasoning blend all over the pork chops.
Cooking
  1. Bake the chops on the middle rack of the oven for 12-15 minutes, or until they reach an internal temperature of 140 degrees F.
  2. Turn the oven to broil and broil the chops for 1-2 minutes to brown the top.
  3. Remove from the oven and let the chops rest in the pan for 5 minutes before serving.

Notes

Baked Pork Chops are great served with a side of vegetables, rice, or mashed potatoes. Drizzle some pan juices over the chops for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
