Preparation
- Heat the oven to 400 degrees F and line a rimmed baking sheet with baking parchment or aluminum foil.
- Place the pork chops between two pieces of plastic wrap and gently pound them using a rolling pin or the flat side of a meat mallet to tenderize them.
- Rub both sides of the chops with olive oil and mustard.
- In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub this seasoning blend all over the pork chops.
Cooking
- Bake the chops on the middle rack of the oven for 12-15 minutes, or until they reach an internal temperature of 140 degrees F.
- Turn the oven to broil and broil the chops for 1-2 minutes to brown the top.
- Remove from the oven and let the chops rest in the pan for 5 minutes before serving.
Notes
Baked Pork Chops are great served with a side of vegetables, rice, or mashed potatoes. Drizzle some pan juices over the chops for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
