Preparation
- Preheat the oven to 375 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and set aside.
- In a large bowl, combine the apple sauce, egg whites, Greek yogurt, milk, maple syrup, vanilla, oats, hemp hearts, 2 teaspoons of cinnamon, salt, baking powder, baking soda, and 2 cups of the apple. Stir until combined and let sit for 5 minutes.
- Pour the batter into the prepared baking dish. Sprinkle with the remaining apple, cinnamon, pecans, and brown sugar if using.
Baking
- Bake for 40-50 minutes until the center is set.
- Cool for 5-10 minutes, then cut into 9 pieces.
Notes
Store in an airtight container in the fridge for up to 5 days or freeze for 3 months. Let the mixture sit for 5 minutes to help the oats absorb the liquid better. Adjust the amount of cinnamon based on your personal taste. Substitute pecans with walnuts or almonds if desired.
