  • 2/3 cup unsweetened apple sauce
  • 1 cup egg whites
  • 1 cup plain Greek yogurt
  • 1 cup milk
  • 2 Tbsp maple syrup
  • 2 tsp vanilla extract

  • 3 cups quick oats
  • 1/2 cup hemp hearts
  • 2 1/2 tsp cinnamon, divided
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
Fruits and Nuts
  • 3 cups apple, divided
  • 1/2 cup pecans, roughly chopped
  • 2 Tbsp brown sugar (optional)
Optional Toppings
  • Greek yogurt whipped cream Optional topping

Method
 

Preparation
  1. Preheat the oven to 375 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and set aside.
  2. In a large bowl, combine the apple sauce, egg whites, Greek yogurt, milk, maple syrup, vanilla, oats, hemp hearts, 2 teaspoons of cinnamon, salt, baking powder, baking soda, and 2 cups of the apple. Stir until combined and let sit for 5 minutes.
  3. Pour the batter into the prepared baking dish. Sprinkle with the remaining apple, cinnamon, pecans, and brown sugar if using.
Baking
  1. Bake for 40-50 minutes until the center is set.
  2. Cool for 5-10 minutes, then cut into 9 pieces.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for 3 months. Let the mixture sit for 5 minutes to help the oats absorb the liquid better. Adjust the amount of cinnamon based on your personal taste. Substitute pecans with walnuts or almonds if desired.
