Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine cottage cheese, eggs, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper. Mix well until smooth.
  3. Fold in bell peppers, spinach, and sun-dried tomatoes into the mixture.
  4. Grease a baking dish and pour the egg mixture into it, spreading it out evenly.
Baking
  1. Bake for about 25-30 minutes, or until the eggs are set and the top is slightly golden.
  2. Remove from the oven and let it cool for a few minutes before slicing.

Notes

Cut the baked cottage cheese eggs into squares and serve warm. You can enjoy them as is or add some fresh herbs or a dollop of yogurt on top for extra flavor.
