  • 1 sheet puff pastry thawed if frozen
  • 4 strips bacon cooked and crumbled
  • 2 large eggs fresh
  • 1/4 cup shredded cheese e.g., cheddar or gruyere

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick and cut into circles, 4-5 inches in diameter.
  3. Line a baking sheet with parchment paper and arrange the puff pastry circles, leaving space between each.
Assembly
  1. Evenly sprinkle the crumbled bacon over each pastry circle, leaving a 1-inch border around the edges.
  2. Carefully crack an egg into the center of each galette.
  3. Sprinkle the shredded cheese over the eggs and season with salt and pepper.
Baking
  1. Bake for 15-20 minutes or until the pastry is golden brown and eggs are cooked to your liking.
Serving
  1. Garnish with fresh herbs if desired and serve warm.
