Preparation
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick and cut into circles, 4-5 inches in diameter.
- Line a baking sheet with parchment paper and arrange the puff pastry circles, leaving space between each.
Assembly
- Evenly sprinkle the crumbled bacon over each pastry circle, leaving a 1-inch border around the edges.
- Carefully crack an egg into the center of each galette.
- Sprinkle the shredded cheese over the eggs and season with salt and pepper.
Baking
- Bake for 15-20 minutes or until the pastry is golden brown and eggs are cooked to your liking.
Serving
- Garnish with fresh herbs if desired and serve warm.
