Preparation
  1. In a large bowl, combine the shredded chicken and mashed avocado, using a fork to thoroughly blend them together until creamy.
  2. Add the Greek yogurt (or mayonnaise), cherry tomatoes, finely chopped red onion, and cilantro into the bowl. Squeeze the juice of one lime over the mixture, then sprinkle with salt and pepper to taste.
  3. Use a spatula to gently fold the ingredients together until well combined, but be careful not to over-mix to maintain some chunkiness in the avocado.
  4. Serve on a bed of fresh lettuce or as a filling for a sandwich or wrap.
