Ingredients
  

For the chicken
  • 4 pieces skinless boneless chicken breasts (about 1 1/2 lb.) Chicken should be at room temperature for even cooking.
  • 1 teaspoon Italian seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste Sea salt and pepper
For the stuffing
  • 12 pieces asparagus stalks (ends trimmed) Trim and wash before use.
  • 1 ounce sun-dried tomatoes (chopped) Can substitute with roasted red peppers if desired.
  • 4 slices mozzarella cheese Can substitute with provolone or dairy-free cheese.
For cooking
  • 1 tablespoon olive oil Use in cast-iron skillet for searing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a chopping board and season them with Italian seasoning, garlic powder, smoked paprika, sea salt, and pepper.
  3. Slice each chicken breast lengthwise to create a pocket.
  4. Lay three asparagus spears on a slice of mozzarella, add chopped sun-dried tomatoes, and roll up.
  5. Stuff the chicken pocket with the rolled mozzarella, asparagus, and sun-dried tomatoes, securing with a toothpick.
Cooking
  1. Heat olive oil in a cast-iron skillet over medium-high heat and sear the stuffed chicken breasts for about 3-5 minutes on each side until golden brown.
  2. Transfer the skillet to the preheated oven and bake the chicken for 15-20 minutes until cooked through.

Notes

For a gourmet twist, wrap stuffed chicken in prosciutto. Check internal temperature to ensure it reaches 165°F to avoid dryness.
