  • 1 lb fresh asparagus, trimmed Fresh asparagus is best; frozen can be used if properly thawed.
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup heavy cream You can substitute with coconut cream for a dairy-free option.
  • 4 slices bacon, cooked and crumbled Pre-cook the bacon to save time.
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan over medium heat, combine the heavy cream, garlic powder, salt, and pepper. Stir occasionally for about 5-7 minutes until heated through but not boiling.
  3. Add the shredded cheese into the saucepan, stirring continuously until melted and smooth.
  4. In a baking dish, layer the trimmed asparagus evenly. Pour the cheese sauce generously over it.
  5. Sprinkle the crumbled bacon on top.
  6. If desired, sprinkle the grated Parmesan cheese on top.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until the asparagus is tender and the top is bubbling and golden brown.
  2. Serve warm and enjoy your keto-friendly side dish!

Notes

This dish can be made ahead and stored in the fridge. It can also be frozen for up to 2 months.
