Method
- Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a microwave-safe bowl, combine milk chocolate chips, peanut butter, and coconut oil. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.
- Gently fold in the crispy rice cereal until all pieces are evenly coated with the chocolate mixture.
- Pour the mixture into the prepared pan and press it down evenly using a spatula. Ensure the surface is smooth and level.
- In a separate microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring between each, until smooth. Stir in the vanilla extract.
- Pour the melted dark chocolate over the rice cereal layer, spreading it evenly with a spatula. Tap the pan gently on the counter to remove any air bubbles.
- Sprinkle the flaky sea salt evenly over the top layer.
- Refrigerate the bars for at least 1 hour, or until fully set.
- Once set, lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into 12 equal bars using a sharp knife.
