Ingredients
  

For the Bread
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 cups unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups sour cream (or plain Greek yogurt)
  • 1.5 cups peeled and diced apples (about 2 medium apples)
For the Streusel Topping
  • 0.5 cups all-purpose flour
  • 0.33 cups brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (cold and cubed)
Optional Glaze
  • 0.5 cups powdered sugar
  • 1-2 tablespoons milk (or cream)
  • 0.25 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
  2. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Cut in the cold butter until crumbly and set aside.
  3. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  5. Stir in the sour cream, then gradually add the dry ingredients until just combined. Fold in the diced apples.
Assembly and Baking
  1. Spread half the batter into the loaf pan, sprinkle with half the streusel. Add the rest of the batter on top, then finish with the remaining streusel.
  2. Place in the oven and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Drizzle with glaze once cooled.

Notes

Best enjoyed warm or at room temperature. Serve plain or with butter. Can store in an airtight container at room temperature for up to three days or freeze for up to three months.
