Ingredients
  

Dry Ingredients

  • 2 cups rolled oats blended into coarse flour
  • 1 tsp baking powder
  • 1 tsp cinnamon

Wet Ingredients

  • 2 eggs lightly beaten
  • 1 cup milk of choice almond, oat, or dairy
  • 1 apple grated
  • 1 carrot grated
  • 1/3 cup dried apricots rinsed and chopped
  • 1/4 cup raisins rinsed

Instructions
 

  • Preheat oven to 350°F (175°C). Line or grease a small baking dish (about 8x8 inches).
  • Blend rolled oats into a coarse flour using a blender or food processor.
  • In a large mixing bowl, whisk the eggs. Stir in milk, grated apple and carrot, apricots, and raisins.
  • Add oat flour, baking powder, and cinnamon to the wet ingredients. Stir until fully combined.
  • Pour into the prepared dish, smooth the top, and bake for 30–35 minutes until golden and a toothpick comes out clean.
  • Let cool for 10 minutes before slicing. Enjoy warm or chilled!

Notes

Rinse dried fruit before use. Let the bake cool completely if meal-prepping—it slices and stores better. Add nuts or use pear instead of apple for variations.
