  • 2 pieces bone-in pork chops, about 1 inch thick
  • 2 tablespoons extra virgin olive oil
  • to taste Kosher salt and black pepper
  • 3 tablespoons salted butter
  • 12 leaves fresh sage
  • 2 cloves garlic, smashed
  • 2 tablespoons apple butter
  • 1-2 pieces honeycrisp apples, cut into wedges
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh thyme

Method
 

Preparation
  1. Preheat the broiler to high.
  2. Heat a large skillet over medium-high heat. Season the pork chops all over with kosher salt and pepper.
  3. Add the olive oil to the skillet; when the oil shimmers, add the pork chops and sear on both sides for 2-3 minutes.
  4. Reduce the heat to medium and continue cooking for about 5 minutes, or until the pork chops are cooked through.
  5. Remove the pork chops from the pan to a plate and spread each pork chop with a layer of apple butter.
Cooking
  1. To the skillet, add the butter, garlic, apples, and sage. Cook for 1-2 minutes, then remove from the heat.
  2. Slide the pork chops back into the skillet, drizzle the balsamic vinegar over them, and transfer the skillet to the oven.
  3. Broil for 2-3 minutes or until the apples are lightly charred.
  4. Remove from the oven and top with fresh thyme. Spoon the butter mixture over the pork chops. Serve and enjoy!

Notes

Make sure to season the pork chops well with salt and pepper for a better flavor. Use fresh sage for the best taste; dried sage won't have the same impact. Feel free to adjust the amount of apple butter based on your desired sweetness.
