Preparation
- In a bowl, mix the all-purpose flour, almond flour, and salt.
- In another bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- Divide the dough in half and shape into disks. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour.
Baking
- Preheat the oven to 350°F (175°C).
- Roll out one disk of dough on a floured surface to about 1/4 inch thick.
- Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
- Cut out the center of half of the cookies to create a window for the jam.
- Bake for 10-12 minutes or until lightly golden.
- Let cool completely, then spread a layer of jam on the solid cookies and top with the cut-out cookies.
- Dust with powdered sugar if desired, and serve.
Notes
Store cookies in an airtight container at room temperature for about a week, or freeze them with parchment paper in between layers. These cookies are best served fresh with tea or coffee.
