Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam or any jam of choice Feel free to experiment with different jams.

Method
 

Preparation
  1. In a bowl, mix the all-purpose flour, almond flour, and salt.
  2. In another bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  5. Divide the dough in half and shape into disks. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll out one disk of dough on a floured surface to about 1/4 inch thick.
  3. Use cookie cutters to cut out shapes and place them on a baking sheet lined with parchment paper.
  4. Cut out the center of half of the cookies to create a window for the jam.
  5. Bake for 10-12 minutes or until lightly golden.
  6. Let cool completely, then spread a layer of jam on the solid cookies and top with the cut-out cookies.
  7. Dust with powdered sugar if desired, and serve.

Notes

Store cookies in an airtight container at room temperature for about a week, or freeze them with parchment paper in between layers. These cookies are best served fresh with tea or coffee.
