Ingredients
  

For the sauce
  • 1 cup milk of choice
  • 1/2 cup cottage cheese Use low-fat for a lighter sauce.
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly cracked black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup grated fresh parmesan or fresh romano
  • to taste dried basil
  • to taste dried oregano
For serving
  • any amount prepared pasta Any type of pasta.
  • any amount prepared meat of choice Such as chicken or shrimp.
  • any amount prepared vegetables of choice Such as broccoli or bell peppers.
  • to taste chopped fresh parsley For garnish.

Method
 

Preparation
  1. Add milk, cottage cheese, cornstarch, salt, pepper, garlic powder, and parmesan to a blender. Blend until smooth, scraping down the sides as necessary.
  2. Transfer the mixture to a small saucepan and stir in dried basil and oregano. Place over medium-low heat and simmer, stirring frequently, until heated through.
Cooking
  1. Taste and adjust seasonings as desired. Reduce heat to low and simmer for about 5 minutes until thickened slightly.
  2. Add prepared pasta to the sauce and toss to coat. Let simmer for 2-3 minutes.
  3. Serve pasta topped with meat or vegetables and remaining sauce; garnish with parsley.

Notes

Store any leftover Alfredo sauce in an airtight container in the refrigerator for about 3-4 days. Reheat gently on the stove or in the microwave, adding a splash of milk to ensure it stays creamy. Experiment with different herbs and spices for added flavor.
