  • 3 medium Yukon Gold or Russet potatoes, thinly sliced About 1.3 lbs, skin-on or peeled
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder Optional
  • 1/2 teaspoon paprika Smoked or sweet
  • 1 teaspoon dried herbs Such as thyme, rosemary, or Italian seasoning, optional
Optional Toppings
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or chives
  • Sour cream or Greek yogurt For serving

Method
 

Preparation
  1. Wash and dry the potatoes thoroughly. You can leave the skins on for extra texture and fiber or peel them if you prefer.
  2. Slice the potatoes into 1/8-inch rounds using a mandoline or a sharp knife.
  3. Optional: Soak the sliced potatoes in a bowl of cold water for 5-10 minutes to remove excess starch. After soaking, drain the slices and pat them dry completely.
Cooking
  1. In a large mixing bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, paprika, and dried herbs until they are evenly coated.
  2. Preheat the air fryer to 400°F for 2 minutes.
  3. Arrange the potato slices in the air fryer basket in a single layer, slightly overlapping if needed. Avoid overcrowding the basket.
  4. Air fry for 10 minutes, then flip or shake the basket gently. Continue cooking for another 2-4 minutes until the potatoes are golden and crisp at the edges.
  5. Remove crispy slices as they finish cooking and let the remaining slices cook as needed. If the slices stick, shake the basket halfway through cooking.
Serving
  1. Transfer the potatoes to a plate and sprinkle with Parmesan and fresh herbs if desired. Serve hot with your favorite dip.

Notes

Use a mandoline for evenly sliced potatoes, experiment with different seasonings, and avoid overcrowding the air fryer for best results.
