Preparation
- Wash and dry the potatoes thoroughly. You can leave the skins on for extra texture and fiber or peel them if you prefer.
- Slice the potatoes into 1/8-inch rounds using a mandoline or a sharp knife.
- Optional: Soak the sliced potatoes in a bowl of cold water for 5-10 minutes to remove excess starch. After soaking, drain the slices and pat them dry completely.
Cooking
- In a large mixing bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, paprika, and dried herbs until they are evenly coated.
- Preheat the air fryer to 400°F for 2 minutes.
- Arrange the potato slices in the air fryer basket in a single layer, slightly overlapping if needed. Avoid overcrowding the basket.
- Air fry for 10 minutes, then flip or shake the basket gently. Continue cooking for another 2-4 minutes until the potatoes are golden and crisp at the edges.
- Remove crispy slices as they finish cooking and let the remaining slices cook as needed. If the slices stick, shake the basket halfway through cooking.
Serving
- Transfer the potatoes to a plate and sprinkle with Parmesan and fresh herbs if desired. Serve hot with your favorite dip.
Notes
Use a mandoline for evenly sliced potatoes, experiment with different seasonings, and avoid overcrowding the air fryer for best results.
