Preparation
- Preheat your air fryer to 400°F (200°C).
- Cut the acorn squash in half lengthwise and scoop out the seeds.
- Brush the insides of the squash with olive oil.
- Sprinkle with salt and pepper to taste, and add optional seasonings if desired.
Cooking
- Place the squash halves cut side up in the air fryer basket.
- Air fry for 15-20 minutes until edges are caramelized and flesh is fork-tender.
Serving
- Plate the squash and enjoy with loved ones or savor it solo.
Notes
Make-ahead by cutting and oiling the squash, storing it in the fridge for up to 2 days. Leftovers can be tossed in salads or pureed into soups.
