Base Ingredients
  • 1 can refried beans Look for low-fat refried beans for a lighter option.
  • 1 cup pico de gallo Choose a flavorful version, homemade or store-bought.
  • 1 cup sour cream A dollop of Greek yogurt can be a healthier swap.
  • 1 cup guacamole Homemade is best but ready-made works too.
  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with spicy pepper jack for a kick.
  • 1/2 cup sliced olives Adds a salty bite to the dip.
  • To taste green onions for garnish Adds freshness and color.

Method
 

Preparation
  1. Spread the refried beans as the first layer in a serving dish.
  2. Add a layer of pico de gallo on top of the beans.
  3. Gently spread the sour cream evenly over the pico de gallo.
  4. Spoon the guacamole on top and smooth it out.
  5. Sprinkle the shredded cheese on top of the guacamole.
  6. Lay the sliced olives gently over the cheese.
  7. Garnish with chopped green onions if desired.
  8. Serve with tortilla chips and enjoy!

Notes

Room temperature ingredients are easier to spread. You can make this dip a day ahead and store it in the fridge. For added heat, include diced jalapeƱos.
